At present, default max stamina matches how full you are. But both for reasons that mesh with reality (e.g. being stuffed after a meal actually makes you more sluggish than less, for example) and help QoL, I'd recommend the devs consider one of the following
1) Use an offset before dropping stamina (e.g. drop by 1% for every satiation point below 75%)
2) Only drop stamina by 1% for every 2% satiation below max.
Or some more complicated formula along those lines.
