I kinda felt the same way as you did before, I didn't really know how I felt about some of the new changes at first. And then after playing and spending some time with the new Console Edition for the last few weeks, I actually really like it now and I'll explain why. Yes, the early game is much more slower and challenging when first starting out, especially with the changes to how you obtain water now.
With that said, the changes to water makes it feel so much more rewarding once you get a steady source of fresh water coming in daily. Also, the new learn by looting/reading system gives you more of an incentive to go out and explore, complete quests and loot random POI's much more than before because of needing books and magazines.
On the old Console version where it had the learn by doing system, it just didn't feel as rewarding to me in my honest opinion, you could just sit there inside your base and spam craft hundreds of stone axes which to me just wasn't very fun at all. Now when you find a good book or magazine you been looking for so you can unlock the forge or so you can craft a cement mixer to start making concrete, it feels 10x times more rewarding now.
And lastly, not only does it make certain aspects to the game feel more rewarding, but it also gives the game legs to where you ain't OP by Day 40 to the point where you don't need to do much of anything anymore. I personally think this is a good thing for the game in general because, it helps to extend the early, mid, and late game stages.
