What does the dedicated server instance do

Having heard that the dedicated server instance doesn't use GPU, but uses CPU and RAM, what exactly is the dedicated server instance calculating?

What is it doing? Is it calculating regions dynamically? Player's positions? Blocks? Physics? Which calculations require the most CPU work and memory? The ones for physics and minibike (regions)?

 
The dedicated server instance handles pretty much everything except graphics. The only reason there should be a dedicated server instance, is if you are in fact, running a dedicated server. All graphics are handled on the players side, not the server side.
