Is there a specific value that adds certain damage type to bullet or arrows ?

for example if I want rounds to add acid damage or explosive ?

No. And there is no acid rounds. The only explosives projectiles are exploding arrows/bolts, pipe bombs/grenades/dynamite and rocket launcher ammo.

Generally there is no acid in the game, but I would guess you simply mean damage-over-time like bleed. Bleed is implemented as a buff, check buffs.xml.
