Playing 7 days to die on offline LAN

Is there a way to host a LAN server that's offline? I see many guides to host a LAN server with internet for steam authentication. Has 7 days implemented a way to be completely without internet? 

Really want to play 7 days with my partner while camping in the middle of the night. 

 
I think the answer is no. You try using the local ip maybe, but pretty sure you won't even get to that screen offline.

You could use a phone hotspot though to get online, then play.
