I've started this game a few weeks ago for the first time,(solo) and honestly cant leave the controller down (xbox series x) and now ive took the step to play online, I just want to know what are the chances of just stumbling upon another player or players base ?

Depends on a number of factors: map size, no. of players on a server and stuff like whether or not all the veterans/friends have concentrated themselves in a biome far from your starting point. :)  The best I got as a newbie was a "Hi" in return to a "Hi" on one server and spotting another player on a bike when I left a vendor's compound. On only one other occasion did I see a lot of player camps and the occasional player on an obviously well-established server with quite a number of players logged on. I gather that's what all the lfg channels are for: finding others to play with.

It was much easier to find and make friends in games like SWJKII: Jedi Outcast because interests were split up into different MP modes (although I played mainly on FFA servers, those were specific servers with more or less dedicated duel matches despite the game's duel mode and just a lot of really cool, chill people and no griefers aboard); the maps were small; there were gaming clans; and you were seeing the same people on the same servers all the time. Large, open world maps and MMOs...not so easy.

I tend not to play with randoms anymore. ("I'm too old [and impatient] for that @%$#.") And, so, am loving the fact TFP are doing all things online connectivity with real world friend co-op/community run servers in mind as opposed to running the game on central/dedicated servers. It's like coming home again. If only crossplay were a thing, I'd be playing with my sister right about now. 

 
I'm too old as well like for COD etc, gaming most of my adult life and nearly 50, I'm on xbox (jarlathelalto) just trying to get my head round this game, crafting is done in real time, so you have to do something else while you're waiting on something to craft, but love the game

 
There's a lot to learn. It's not uncommon, apparently, for new players to turn off horde night and just concentrate on learning the systems/getting a feel for the game for a bit. The real time crafting can be sped up with various skills, but I just chill and find other things to do, following my own curiosity across the game world as opposed to being led around by the nose and/or playing slave to the interminable timers. I use OCB's Stop Fuel Waste mod (on PC) to preserve that precious fuel while I go wherever and do whatever strikes my fancy.

Considering you are on console, you can only have either 2 or 4 players (I don't remember which for series X) and those players need to be in your same game to find them.  So, number one is whether or not you even have anyone else in your game, and two is how far away from you they spawned.  However, because of changes to trader biomes in 1.0, you'll all probably end up going through the same biome progression if you both are doing quests, so there's a decent chance of seeing each other.  In the past, if you started on opposite sides of an 8k map, it would be easy to never cross paths with only a couple of people in the game.

In a single-player game, I never considered wood to be a serious resource. While building, you save up tree seeds, then plant about 100 and cut down this forest from time to time. A full stack of wood is enough to operate a forge for several days of real time, and a tree grows in 4 hours, that is, in 2 game days of 120 minutes.

On the server where I am currently playing, tree seeds are disabled. Here you have to calculate fuel, since there is not a single tree within 500 meters around my house.

Don't forget that you can use other things than wood for fuel.  Save wood for building if it's a limited resource on servers and use something else for your workstations.
