can any one tell me why we now seemingly have to go from rock to rock looking for iron etc.. instead of digging down into veins...?
 
Not sure what you mean. If you find an ore rock on the ground, you just mine directly under that to get more of it. That hasn't changed since I started playing in A20, and was probably the same for many alphas before that.

Note that if you are using mods, a mod may place the ore rocks detached from the underground ore. Also, a POI may place the ore rock without any underground ore. But in vanilla when you aren't at a POI, there is ore under each ore rock.
 
I don't mine iron. I scrap cars, beds, vending machines, lamp posts. All of the minable nodes extend directly beneath the top rock but it may not be visible after you harvest the top layer. just aim dead center

As others have said, if you find a resource on the surface, there's a vein below. I thought I'd also mention that the map will show different colored points (squares) for those surface resources. The coloring is really subtle and the squares are small, so they're pretty easy to overlook or confuse with just a rock.
 
In case you never got it. :) When you mine those nodes at surface then whatever you got from it you will find in the earth beneath it. Just hit around in the hole an you will find it. Sometimes you might find other resources with them. I have dug holes to make my base and struck resources without there being a node on the surface so you could potentially find ores anywhere.

Sounds like you're just hitting the iron ore directly on the surface then moving on to the next one you find. Keep digging after the iron ore is gone.

Yeah back when I use to mine a lot I recall digging down with the node vein and getting 10s if not 100's of thousands worth of ore out of my mines.
Sometimes finding other kinds of ores in the same hole.

I glanced at the xml:s for other stuff today, and saw that they added sub-biomes for ore nodes. I assume for decorating the surroundings, however they want that to be - but that makes me think it might NOT be linked to the ore vein generation. I have no proof either way, but I wouldn't be surprised about a hiccup there, either in design or implementation.

Anyone who knows something about world generation checked it out?
 
A little tip about mining at a node, you'll generate heat and could trigger a few zombies or a screamer, place some spike traps around the node to slow them down so you have time to climb back up your ladder if you're using them.

Not sure if something got broken in 2.0 with that as I haven't played much on 2.0 yet and haven't done any mining. But if you aren't seeing any ore under an ore node, I would suggest reporting it as a bug. And the best thing you could do when reporting it is to take a short video (maybe 30 seconds) that shows you at an ore node and then digging down 2-3m in an area that's at least about 3x3, though bigger would be a better way to show it. That way you can show them that there isn't any ore under the ore node.

Just be sure you're doing this in the wilderness and not on an ore node that is on a POI. Those aren't guaranteed to have any ore under them and are mostly there for looks.
 
I agree with Dead Wombat, ore is definitely much more sparse. I haven't found a large node yet in 2.0. Usually all you have to do is dig a long tunnel under ground and find various nodes. Yesterday I dug 2k and did not find one. Digging from several surface nodes have only given up a little.
