Does anyone have any instructions or information about running a dedicated server on an M4 Mac mini?

Yes, download and sign into steam, search for dedicated server in your library, download it, go into the game files, edit severconfig.xml to be the settings you want.
Then click startdedicatedserver.bat

its the same exact process as a windows machine, only diff is your localuser appdata folder will be

~/Library/Application Support/7DaysToDie/

note the tilda.
