There appears to only be two options in the RWG section. I would like a larger map than 8192. How do I do that?

Ahem....
As far as i know 8k is all that is supported for single player.
to get a larger map you will need a dedicated server.

The client and server will no longer generate maps bigger than 8K. They will run a map up to 16K, but they won't generate them. Nitrogen, mentioned above, will generate beautiful maps that are far better than the current state of RWG.
I'm still waiting for TFP to do something with RWG, but sadly all of that potential is mostly being wasted by 1) lackluster RWG generator 2) internal RWG size limit of 8K.

As others have already pointed out - Nitrogen 3rd party map generator is the first option (16k map ~ 30 minutes everything considered). However, its not entirely problem free - water acts sometimes funny (there are holes in it occasionally) and sometimes people get some kind of reference null errors kicking them off.
For the true vanilla map larger than 8k you need to install a server version of 7 days to die (steam, tools, you can download and install it there if you have 7d2d on yourt account), then open up the directory where it was installed and edit the serversettings.xml file to have the desired map size. Generating a 16k map with RWG takes roughly 4 hours and you probably can not do it if you have an AMD graphics card. The server terminal needs to have at least couple of lines of text after about 1 minute of the terminal window popping up - if it only has single line you are stuck. It's normal to spend hours on "generating socket data". You will get Four 8k maps (islands) connected with bridges where roads cross the sea between them. Anything higher than 8k but smaller than 16k will cut off parts of the other islands but you get the same layout.
16k map size will be approx 3 GB. The client will be "initializing" for about 3 minutes (if your client is on SSD) every time you load up that world. You will need ~16 GB of RAM client-side to have a good experience on a 16k map. The dedicated server uses about 13 to 15 GB of RAM hosting 16k map. You want about 24 GB or more ram if you want to host the game on the same computer you are playing. For the 16k map size.
You do not need 16k map for solo play. It is more of a thing if you have many people running around to make it much much rarer to encounter another player. Or you are playing with loot reset off and are relying on looting stuff living a nomadic lifestyle.

The current Nitrogen build has few issues - while it uses supposedly all the POI's including an option to use few Naz specific ones the water is a bit odd sometimes (holes in the water occasionally) and sometimes player gets a streak of reference null errors kicking him/her off the server. The supposedly latest Nitrogen I downloaded was for 18. experimental build. all the people use the current 18.2 b5 stable to connect to the server. Server is also 18.2 stable.

I have been using Nitrogen for quite some time. I have not seen any water glitches other than what is already in standard maps. I recently used the Nitrogen with Compopack42 (275 added user POI's) on a 10K map. Map size does affect the client side experience in regards to download speed. I did start a 16K map a couple months ago, but the client side download can be a bit frustrating if you don't have it set for max download speed. The memory issue brought up above is also a concern for clients. However, we've had users with only 12GB of RAM run a 16K map. On the server side, I've found that it only actually takes about 8GB of RAM to run a 16K map if you have it running just the 7D2D server. Nitrogen allows you to make a very customized map in regard to Biomes, terrain, how many rivers, lakes, towns (and size), etc.
