Is there any reason to believe any progress will get wiped between the experimental version and the full release?

Almost guaranteed to be multiple updates and restarts.

You can also wait for the main A19 release and not mess with the experimental builds. If you make the choice to play experimental, you should deal with the drawbacks as well.

Even between experimental versions you should restart to avoid any bugs that come from the changes they make between experimentals. 

If you don't want to have to start over you shoudl wait until it releases and isnt in experimental anymore. Thats usually a few weeks.
