The logs typically reside in these locations:

[*]Windows dedicated server
<gamefolder>/7DaysToDieServer_Data/output_log.txt
[*]Windows dedicated server started through startdedicated.bat
<gamefolder>/7DaysToDieServer_Data/output_log__<DATETIME>.txt

Something like that (I am at work so I can't verify the file location on my computer).

It has worked for me in the past when I started having a problem.
Go to Steam > Library and right click on 7D2D > Properties > Local Files > Verify Integrity of File and run the check.
It's worth a try.
