The current armour system creates cookie cutter builds. No freedom.

Please reconsider the armour system, as it creates very specific armour to what you are doing, for example:

The Biker set is for melee,
The Lumberjack set for cutting trees,
The Miners is for mining
Preacher set for fighting Zombies / Horde Night,
etc.

Go back to the older systems with:
primitive armour, cloth armour, leather armour, iron armour, steel armour, etc.
You then can find armour that has the attribues (Star): +25% more defense, +25% less noise, Less stamina, etc.

Use weapons and mods to gain more wood, ore, more zombie damage, instead of the armour sets.
An Axe that gives you +50% more wood, vs gloves that gives more wood.
A Pickaxe with +50% more ore, instead of a "Miners Outfit"

This allows us to use ANY armour while mining, cutting wood, gardening, or killing zombies. This comes down to how much defense at the cost of stamina and noise.

Instead of the Farmers outfit, an equipable item that gives a bonus to harvest, bring back the Hoe?

Uhh...yeah, they do the same on Final Fantasy XIV too, they use certain clothing (and body accessories) to boost the ability to craft or extract on whatever you're trying to do. How is that a problem?

Wouldn't you already be switching mods in and out over and over to make these builds anyway?
The game just does it for you now.

You can technically just wear ANY heavy armor to get the current perks of the Heavy Armor category.
The sets just give bonuses which are nice.

You can still mine in any outfit... The Auger's mods are still excellent without equipment.
The mining perks bonuses are still excellent - without any equipment.

The set just allows you to really dedicate your mindset to what you're doing.

You can give the appearance of whatever armor you please to your character as long as you have crafted it previously.

If I'm in the apocalypse, I'm not wearing a set of Knight's Armor into the wasteland, I'm wearing a hazmat suit. If I'm going mining, I'm not wearing a set of knight's armor, I'm wearing something cool and good for the environmental danger, etc.
(arguably, I think the Biome equipment as a separate set of non-visual gear isn't great. Would be nice to have the appearance of being in a Hazmat suit.)

TLDR

Mods and perks for the tools/weapons/armors already get the job you're talking about done.
You would be doing mods to get the same bonuses anyway, or making multiple sets of gear with the appropriate mods.
The game does it for you now.

I don't think there's a real need to go back to the old armor system when everything you stated that you want here is still applicable by just taking perks and wearing any armor that matches the weight of the perks chosen. (Heavy, Medium, Light, etc.)

If I may, I think you miss the design of the old armors. Many people do. Would be nice to have more models or interesting gear over-all. Maybe some hybrid builds to get a full set bonus in some way still? Could be cool.
