That would just make it where zombies become irrelevant. You sprint faster than running zombies so having no stamina would make it where you can just outrun them and consequently cause zombies to no longer be a threat.
Personally I prefer a mix. I want weak zombies in the hundreds chasing me with a couple harder specials sprinkled in. Nothing like the rush of being chased by hundreds of zombies. Also your "there's other games for that" assumption is wrong. Please name me one title that meets these criteria...

What I do works well. Bow and arrow/melee, and when there is a crowd, gun them down. Not all caveman.

Hmm I'll keep looking. I haven't even found cities on the scale of those in A16. In A16 I found a city that was 1.3 km in diameter (I measured, due to curiosity since it looked huge.). It had everything, skyscrapers, residential, and industrial.
