In the audio settings of your game you can disable Discord entirely (if it still gives you that option). If not, go to Discord > Connections > Look for 7 Days to Die and disconnect.

It's in the game settings (not game options, but the main settings). You'll see Discord as a tab in Audio (I believe) and an option to unlink it.
