Every time I start the game, I get no farther than the "Loading particles" preloader before it crashes. I have log files available if needed, but it crashed so hard I couldn't take a screenshot.

Yes, log files are needed.  You haven't really given any information that could be used to help you.

 
GPU driver is quite dated. Listed as OEM even.  Download and install the latest driver from Nvidia.  Never bother with your computer maker or Windows for those.

Your error indicates that you very likely need to exclude the client from security software. This is covered in detail in the Support FAQ thread that is Pinned here.  After you have properly excluded the client and save folders, then validate your game files a few times.  Finally restart your system and then give it another go.

I have way more faith in the first part than the second.

Skipped the fast-and-dirty restart in favor of a full shutdown.

delete it manually:

E:\SteamLibrary\steamapps\common\7 Days To Die\Data\Addressables\Standalone\automatic_assets_entities\zombies.bundle
and revalidate your files after - until it is redownloaded again.
