I know these refresh every x days (depends on settings): cabinet, coffee maker, boxes.

Which ones do not refresh?

I think these don't: shelves, coolers, things in trader-area.
What else? (so it's safe to disassemble)

The new chunk reset is the more complete loot refresh. Configure it to your liking and place claims and sleeping bags to prevent it where you don't want it. You can disable loot refresh then.
