User stuck on the "starting game" screen during login, reloaded profile and now they're level 1

Version
2.5
Platform
Windows
I host a dedicated 7DTD server in my home. We have 5 total players (all friends), of which 2 get on almost every day. 4 of us login from consoles (3 - PS5, 1 - Xbox ONE) and 1 of us logs in from PC (Win 10). I updated the server for the 2.5 version release on Friday, Dec 19th. Before performing the update, I did the KICKALL / SAVEWORLD / SHUTDOWN commands (in that order). After the update there were no issues for myself (PS5 player). On Sunday, Dec 21st, one of our female users was unable to login. I don't believe she logged in on the 19th after the update, but I know she logged in 1 time on Saturday, Dec 20th. On the 23rd I shutdown the server and took another backup. On the 24th, we attempted to fix her login issue. Her username is Cordova-01 (PS5 user) in the logs. Her (Cordova-01) and I (DrewSnow2Nilla) are the 2 players who access the server almost every day.

We attempted several times to reload her profile with no success. Changing her character resulted in her profile being reset to level 1. I have documented our testing process in "Reproduction Steps".

Reproduction Steps
I first attempted loading her profile from the backup on Dec 19th.
She was able to login - Successful.
To test it we had her die to make sure she could respawn - Successful.
As an added test we had her log out of the game and log back in - Unsuccessful.

Next I loaded her profile from the backup on Dec 13th.
Login - Successful.
Die & Respawn - Successful.
Logout & Log back in - Unsuccessful.

I don't remember if I tried the Dec 1st profile or not, but if I did the results were the same as the others.

The last profile I tried was from the Dec 23rd backup (which I didn't think would work at all).
Login - Successful.
Die & Respawn - Successful.
Logout & Log back in - Unsuccessful.

I noticed in the logs that it kept referencing "WRN Parameter 'IsMale' not found in animator". So, I suggested that she try changing to a Male character and logging into the server again. I reloaded her profile from the Dec 23rd backup before her login attempt.
Login - Successful, but it reset her level to 1.
Before this all happened she was level 71.
Everything she had on her was gone (tools, loot, weapons, gear). Her skills, perks, experience, challenge completions, quest completions, etc. were all reset. Interesting though that the game recognized her profile enough to keep her visited map areas, but didn't keep any POIs that she marked.

I had her logout and change her character back to the female character she was using, which I think is Allie (Premade Profile). She logged back in and was still at level 1.

For reference: The IsMale thing can be ignored. It's normal and not a problem. If you change the profile, then the person is a new player (level 1, no perks, magazines, etc.) as you saw. You can of course return any items and give them XP to get them back to where they were.

You didn't attach any logs, including server logs (or anything else), so can't really see what the problem is. You can try attaching them again or paste the logs on pastebin.com and link to that here. PC client logs can easily be found by having the client(s) open the game to the main menu and pressing F1 to open the console. At the top right is a button to open the log folder. Find the log(s) that show what is happening (usually the most recent, though if you are just opening to the menu, the most recent is only that, so you'll need one before then. That won't help for console, unfortunately.

Yeah what happened to her save data on the server usually has some hints in the log when she tries to connect. You can try teleporting her to 0 0 0 while she's stuck in that state, then have her leave the server and rejoin, sometimes a player can get stuck in an invalid spawn location in some rare cases. As far as swapping profiles goes, that doesnt have anything to do with the save data, just the character's looks.

"Interesting though that the game recognized her profile enough to keep her visited map areas, but didn't keep any POIs that she marked."

That's actually in a different file than the save file and it's located locally, so it would be on her machine.
