How do I fix the giant cliffs? Is there a way to increase water level or decrease ground level? Or possibly a way to turn these into beaches?

How did you create these cliffs? Is this from the Create Rivers command?

If so, you can adjust the banks using the Riverbank width [m], Riverbank Erosision and Riverbank Smoothing Strength parameters in Create Rivers.

If you raise the water level, you risk flooding the map. (unless this river is consistent height on the banks, in which case you may be able to use "Flood Area"

If you decrease the ground level, you run the risk of having very little terrain on top of the bedrock.
