More items go have a deeper sense of... well more. 

Resources 

Chemicals: good for crafting drugs, powerful explosives. Ammo. Etc can be looted or crafted with 4 acid to get 12 Chemicals

Fertilizer: needed to upgrade crop plots and be used to make even stronger explosives. Can be found or crafted with nitrate, rotten meat, bones and chemicals 

Yarrow: a white flower found all over. This has healing properties and more uses 

Raw iron/Raw lead

raw iron and lead can be harvested from ores. They melt down for 10 of the item 

Mineral ore: randomly when mining you will get vein Ore. Of you smelt it you get 10 of everything 

Resin. Harvested from trees or trash  can be used to make homemade glue, fire starters and syup?

New ammos/equipment 

Incendiary 9mm, 7.62, 44, and shotgun shells: deals bonus damage and chance to set targets on fire

Shock arrow: using lead, Chemicals, wires and arrow heads you can make a arrow that will SHOCK YOU

Shock junk rounds: using lead and electrical parts this when shot out of a junk turret will Shock targets 

Incendiary junk rounds. Same thing but Cost glass and gas. But it sets targets in fire. 

Stun grenade: using Chemicals, gun powder, iron, springs and mechanical parts. This when thrown at zombies will stun them and make them un able to move for 10 seconds.  Last longer with perks 

Shock charge: kinda like a molotov but electrical! This shocks targets. 

Thermit: a stronger fire grenade that last longer and does more damage

Makeshift sight: a crude sight for early uses

Crude scope: a Crude scope for early uses

Forged receiver: lowers durability by 10%  (Can be added to bows) 

Fast mag: increase reload by 10% 

Blessed metal: increase damage to the undead

Head hunter: increase damage to humans/bandits 

Spear Pike mod: increase reach by 1 block 

Spear trident mod: increase width of your attack

Spear Shock coil: adds Shock damage 

Knuckle protective wraps: lowers damage taken by 10% when have out

Knuckles love tap: increase cripple chance 

Knuckle boring bits: goes through 10% armor 

Sledge Lighten fram: increase swing speed and less stamina at the cost of damage 

Sledge guillotine: increase dismember chance 

Sledge spike mod: increase damage to armor targets 

Baton unstable battery: adds fire damage 

Baton Barbed teeth: stuns targets and increase armor damage 

Gas mask: take less damage from acid and Radation.

Healing/food

Herbal painkillers: weaker pain killers 

Herbal vitamins: weaker vitamins but can be used in crafting other things. 

Emergency first aid kit: instantly heals 100 hp but has cool down.  Cost painkillers, fortbites, testosterone and first aid kit. 

Boosters: increase jump hight for a few minutes.  Can stack with parkour.  Cost oh shiz drops, testosterone and vitamins

I support the game devs for removing resource items from the game (like glass jars, cans, brass trophies, etc), so I have no interest in adding more junk items. 

As for the rest of your suggestions here, I don't really like them. The trident mod idea is interesting, but I wouldn't want it.

The Junk items like door nobs and trophies and cans 100%

But more resources would be cool. Even more reasons to go out into the world. 

 
More of a build item but involves ammo, id like to see an assault rifle auto turret that takes 7.62. I feel like once you get to a curtain point you get more 7.62 than you know what tot do with.

A m60 turret would be really nice maybe add 2 m60s!!!

 
It does feel like the game has been stripped a bit from realism. Empty cans and jars are useful in that one can be used to fill up water again and be boiled, empty jars can also be broken and used for other items like making scopes if not mistaken,  or glass blocks. Emty tins can be smelted for iron perhaps. Nothing is useless at the end of the day. It just adds more to the game where its become too simple and boring now. Would love to see more. People are complaining that the game has become boring in some ways. Even removing clothing, it added to the realism of the game, finding shoes, clothing. Its hard to play this game now and not miss the realism the FunPimps have removed.

Honestly, I think the gaming industry at large (especially the triple A space,) is suffering from a severe case of "bigger is better" and "more is good." In fact, that appears to be the guiding philosophy of game design anymore, and I think that is largely a reflection of the distinctly American "supersize it," "blockbuster," "too big to fail" mentality.

The game is already excessively granulated, imo, and the fact is that no matter how many items TFP add (and add and add), it will never be enough for some. They'll always want more -- likely something they've seen in another game they want to play around with in this one. But that's largely what mods are for: customization and personalization of games to suit your specific needs and tastes.

Sadly console doesn't get mods

But adding more would be great. Granted some stuff maybe not so much but more progression and imo a longer grind would be great

 
They do for other games. Why not this one? I don't know.
Part has to do with distribution but for PS the major part always was Sony wanting to be in full control of content since they pretended to be strict on "family friendly". Also the fact that platform holders have to deal with refunds for paid mods in case they do not function as advertised is something that not all of them want to deal with.
