Here's my take on adding extra information to the HUD:
This mod only adds the grey box on the right, I left the default health, stamina and stealth bars in the image to show positioning.
From top to bottom:
Level, Deaths
Outside Temperature, Feels Like Temperature
Hunger, Thirst
Zombies Killed, Players Killed
Download it here and unzip into your Mods folder.
