I mean I have been doing trial and error modding and I have done it all without any documentation - does documentation exist? @moderators?

Is there a pinned resource for actually using mods, or is the 7 Days To Die modding scene a closed environment specifically for people who want to create mods for 7 Days To Die?
The final game will have steam workshop support according to developers, that should make adding a mod easy.
While still in alpha using mods got much better recently. Many mods can just be installed by dropping them into a "Mods" directory in your install directory of 7D2D. Mods usually have instructions included, especially if more is needed than this simple step.
Easier is to use is the Mod Launcher https://7daystodie.com/forums/showthread.php?48537-The-7D2D-Mod-Launcher-A-Mod-Launcher-for-7-Days-to-Die , which does install AND deinstall most mods available. It is similar to what steam workshop should eventually provide (AFAIK)
