Is this a thing or am I going to have to wait for the update?
Is the windows xbox version of the game playable/crossplay with the regular series x/s version?

You have to wait for the update. Until then, PC can only play with PC. Xbox can only play with Xbox, and PS can only play with PS.
Microshaft just uses the Xbox monkier on the PC to advertise and confuse. You aren't playing "Windows Xbox version". You are playing "Windows MS Store version" which is sold through the gaming app MS pushes in an attempt to gain extra sales by utilizing the familiarity of the console.
