PC How to run a different version of the game?

Greetings Survivors,

I am playing a playthrough in A20 and I just quit for the night only to see that A21 is out and Steam is automatically updating the game.  I want to continue this A20 playthrough for a bit longer but the save won't be compatible with A21.  Is there a way I can play this save using A20 after A21 is installed?

 
Right-click on 7 Days in Steam, go to properties, select betas, choose alpha 20.7 from the drop down menu.  Most versions are available this way.
