What file would I edit if I wanted higher than what's available in the single player options and where would I find it? Thanks in advance for any answers.

What is it you want higher of?

I want to play with 300% loot and 3x XP.

When you start a game open basic tab for XP and advanced tab for loot

In "7 Days To Die/Data/Config/progressions.xml" you can change things like how many skill points you earn per level up, or the experience factor needed to level up.

Yep in the game menu when starting a new game or continuing one, there is tabs in the top right, it´s under basic, i think you don´t need to mod for triple xp. Not sure about the loot, i think it´s 200%. But tbh 200% is a LOT. No need to mod the game for 300% you get sprayed with loot already at 200%.
