This is more of heads-up kind of situation.
My mate and I had a local server going, everything was smooth. I'm hosting on my PC, cross-play enabled, he's on PS5 and we're having the time of our lives. Then all of sudden, after a couple of weeks of everything running smoothly, we both logged on, me on PC and him on his PS5, and he can't find my server listed in Peer-to-peer server list (I think it's different on PS5 though, but still he couldn't find the server listed), and irrespective of the aforementioned, the server wasn't listed at his end. So that was it. I check the local server setup options, and cross-play is still enabled. I had no idea what to do. UNTIL, I had just logged in a week later to check out our joint efforts going to waste, but just before I launched the server I checked the Main menu - Options/general settings / cross-play option and no fricken way, CROSS-PLAY that was originally enabled, had reverted back to Disabled. So I think this whole time this was our issue.
Main menu - click Options / general / Cross-play in multiplayer - Enabled (2nd from the bottom of the list on PC)
And from time to time when you're "Continuing game", at least check and Enable or disable Cross-play. Hope this helps anyone.
