Thank you for reporting.
Not being able to use or move the knife when switching toolbelt slots during a harvest animation was an issue. I have not been able to reproduce it in V2.0 b289, but I added your report to an internal ticket for the issue.
It would help if you are able to reproduce it without using any mods.

The Challenge specs for harvesting meat has to be done with a bone knife as well. this is not clear.
I found a hunting knife early and couldn't use it to register harvesting meat.
The config sys files confirm that the reward can only be got with a bone knife

I was able to reproduce not being able to use the Bone Knife after switching slots during the harvest animation, and have left a comment on an internal ticket.

I couldn't find this in the release notes, but the fix for this should be in the latest V2.1 stable version
