Adding memory to GTX 1080

So last year I bought more memory for my GTX 1080 to bump it from 8GB to 16GB. It is installed and the card sees it, I can see the card showing 16GB total memory in Task Manager. However...

It seems that it is only using 8GB. I have kept drivers updated and looked through all the options with the software that came with the card but cannot find anything about how to adjust the memory allowed to be used.

Anybody out there have suggestions?
