Sometimes you can launch them into low orbit.

(same for deer, Bears, (oh gods that one is hilarious) etc)

I think the key bind for sticking your head out the side of the car to shoot is Alt, and to actually fire you need to hit F4. It's been in the game since Alpha 15...
