We've tried everything, but it still doesn't work; I haven't tried connecting via IP because there's nowhere in the game that displays the IP address. You don't provide much information. All anyone could do is guess.
For crossplay to work, the host needs to be hosting a game that does not use mods. It needs to use only settings that are compatible with console (some settings are PC only). It needs to be a map size that is allowed on console. Also take note of the following:

im using ethernet. Also, the better system should always be hosting the game. Wired connection is best. Using wi-fi? "Well, good luck, you're gonna need it!"
I'm trying to set up my own server to play with friends. One person is playing on Xbox, while the other two and I are playing via the Xbox app on PC.To add to what Riamus said, I assume you're attempting to find a peer game so make sure you're searching for their username in the peer2peer tab and that you've selected the correct region. Double check that your clocks are synced to internet time too.

Where can I find the log file? Then drop the most recent logfile of your server to a text-sharing site and post the link here.
Or, as an alternative, post your problem here, it is the professional help desk for 7D2D: https://7-days-to-die.zendesk.com/hc/en-us/requests/new . Best to submit the logfile as attachement to them too, otherwise they'll probably ask for it later anyway
As a side note: Every 10th player coming here looking for help says "We've tried everything" and it is possibly the most errneous statement they can make. And it gives no information at all what steps have been actually taken
They are usually in C:\Users\[your_username]\AppData\Roaming\7DaysToDie\Logs\ but you can easily find them by opening the game and pressing F1, even at the main menu. There is a button to open your log folder from there.Where can I find the log file?
