I've been doing 2.0 beta testing since June 16th, and if the revised version is released on June 30th, can I continue to play the beta version's stored data?
Or should I start all over again?

Usually, you can.

HOWEVER. You will be missing out content like POI's and other changes that happened between when you started your save.
YOU WILL HAVE MORE BUGS. Eventually your save is likely to break no matter what as a result of bugs and issues caused by holding onto it.

I say this repeatedly every single time we have experimental, and no one listens.

Unstable Experimental is only for Testing and reporting bugs. It IS NOT for long-term gameplay. Expect that you will have to wipe with every experimental update, and again when Stable drops.

You can probably keep playing it, just keep in mind that you're going to have issues. And when you have those issues, we are going to tell you to nuke it and start over. There is no fixing that.

and no one listens.
The world produces millions of new newbs between every two patches; some of the current players weren't even born the first time you uttered those words. As frustrating as it might be, Some will inevitably miss the message Every Time, even in the next ones.
