I agree I've seen this kind of behavior more often than I would expect. I'm standing in plain view of a zombie on the same level with nothing in between us and they walk over and start beating on a nearby tree. Just one example.
A lot of times you can find farms with some corn nearby. Loot all the lives ones for early day food, eat raw eggs from nests, eat those old sandwiches if that's all you have. The sandwiches usually drop pretty often in early day loot. Drink from water sources if you're going to die of thirst...
Thankfully I've never done it, which is actually surprising. My brain is notorious for pushing the wrong button. I can't tell you how many times I've hit my vehicles with a melee weapon because I try to get out before the vehicle is full stop.

In my opinion part of the problem is skill to craft armor levels all armor types up at once. I would prefer the types broken down with less of a point gap to each level. In my last game I was on day 133 and I could still only craft green armor.
Mining metal is one of the noisiest things in the game. It attracts a lot of attention. I'm very paranoid about zombies showing up and dropping in the mining hole. I periodically jump out and take a look at around. You could also carry a turret with you. If nothing else they serve as warning...

The reason the forge is first is because of how the crafting progression is setup. You need to be able to make iron/steel so you can craft things on the workbench.
You actually can make places you can walk on and shoot through with wood/iron/steel bars.
It could be that particular POI. I hit a 4 skull POI on week one in the Pine Forest. On the rooftop of that POI were a bunch of zombies and a Demolisher. It was way too early for me to see that guy so I'm guessing he was part of the POI spawn.
