I have only ever had this happen when running mods. 

4k hours in and I have never planted a tree. I do use the mod that turns off production when nothing is cooking/smelting though so that helps. 

Caves, jars, farming, LBD (magazines are the absolute worst). Tongo mod actually handles the books well.

All my quests are now multiple KM away. I do not want to restart. Is there anyway to reset all completed quests so I get the close ones again?

Have not seen it either since the last update. 

Daggerfalls map was bigger than all 1000 Starfield planets put together. 

Tier 5 infected are the sweet spot. Barely have to make my own ammo anymore (plz no nerf FP).

I carry cobblestone blocks on me and just block off the entrance to the 2nd floor. 

Under Items.xml crossbow <property name="AutoReload" value="false"/> Change false to true and it will auto reload.
