I use pressure plates to attach hatches to. A smaller block and the hatch does not fall if a ladder is broken.

Mixers can be found in random mines as well.

The mini bike speed on console is not reflective of the quality of the bike. There isn't a way to increase the speed.

No hot key for dropping but a d-pad option to drop when an item is selected.

If you have your tunnel only 2x1, if you get off the bike in the tunnel you can not get around it. You could dig some pit stops that are larger along the tunnel where you plan to park.
