Ok, after searching and testing what we found, we have our answer. The map we were playing on was an old one, apparently made before the last xbox update. Even through the game had updated, we did not know the map nor its contents do not get updated to keep from destroying a player's map...

Trying to find out why 3 of us can build catwalks, catwalks with railings and a few other things on a friends map, but if we're playing on one of ours maps (each on a different xbox) we dont have any options for them. All are on xboxes. We are pretty sure we never came across any schematics...
